Green kitchen extensions

As far as i can tell wood is the greenest option for worktops, and I hope to experiment with led lights, floors will hopefully be water underfloor heated, be wood (bamboo?) and maybe limestone ( i think i read this is a green option but do not understand why).
any advice what not to do and what to do would be great. I want to have somewhere for composting and food waste and have a double sink for washing up. for the window we want 3m bifolding doors and although wood would be greener and cheaper, some one said they may warp and so aluminium would be better? for the units i was thinking wicks as they are cheap. I got a book the green kitchen richard ehrlich, which has been useful, does anyone know of any good websites or sources. I want to get it right so thanks for any feed back. Cheers Emma Wheeler
